The Easiest, Cheesiest Enchiladas Ever

Easy Cheese Enchiladas

  • 6 cups sharp cheddar cheese
  • 1 can steak chili
  • 1 cup red enchilada sauce
  • 8 corn tortillas

Spray a 9×13 inch baking dish with nonstick cooking spray. Microwave the corn tortillas for about 60 seconds, just until the tortillas are soft and warm. Sprinkle a bit of cheese inside each tortilla, then fold the tortillas in half. Lay the tortillas in your pan, overlapping them slightly. In a small bowl, stir together the chili and enchilada sauce. Spread across your tortillas then sprinkle the remaining cheese on top.

Bake in an oven preheated to 400 degrees for 20-25 minutes. Serve with sliced avocados. Enjoy!
