Sautéed Greens: Spring Eating Has Arrived

The mild winter we’ve had in the Northeast has meant that all our favorite greens are showing up in the farmer’s market a little early this year. Or at least that’s how it seems anyway. We picked up a few of our favorites last weekend and we’ve been making all kinds of dishes with the veggies we love and have missed, including these garlicky sautéed greens.

With pungency of garlic and the bright acidity of a little vinegar, these fresh, tender greens are a treat. They’re also a cinch to make and a reminder that the easy meals of summer lie just ahead. Fry up a couple of eggs and you’ve got a hearty, healthy lunch or a light dinner.
