Quick & Healthy Blackberry Breakfast Parfait

Breakfast should be simple. It really should. No need to heat up a pan or stir up a bit of batter in the middle of summer. With a mound of Greek Yogurt and a handful of fresh seeds and nuts, you can toss a fresh bit of berries into the mix and feel entirely, blissfully well-fed without worrying about anything but how great you feel after such a fulfillingly simple meal.

Blackberry Breakfast Parfait with Honeyed Nuts

In a small bowl, combine:

  • 1 tablespoon pumpkin seeds
  • 1 tablespoon sliced almonds
  • 1 tablespoon oats
  • 1 1/2 tablespoons honey

Microwave until the honey becomes bubbly, about 45 seconds. Allow to cool completely before spooning atop:

  • 1/2 cup vanilla greek yogurt

Top with:

  • 1/4 cup fresh blackberries
  • 1/4 cup fresh blueberries
