Persimmon and Clementine Salad: A Healthy Holiday Treat

The approach to Christmas and New Year’s is littered with indulgent eating. There are more than 10 days left until Christmas and already I’ve had my fill of candy, cookies, and egg nog. But, because I wouldn’t trade those treats for anything, it’s a very good time to eat a salad. And not just any salad — I’m opting for gorgeous, fruit-laden salads with jewel toned fruits and fresh, bright vinaigrettes. This terrific persimmon, pear, and clementine salad is a good example. Beautiful enough for company, it’s also a fantastic and healthy lunch. Hey, why not treat your self?
