Pea, Edamame, and Apple Puree
Serving Size:
Makes 38 ounces.
Ingredients:
- 1/2 pound frozen peas
- 1/2 pound frozen edamame (soybeans)
- 2 apples
- 8 ounces apple juice
Method:
Fill a 4-quart pot halfway with water. Bring to a rolling boil over high heat.
While water is coming to a boil get your “green veggie shocking station” ready. You’ll need:
- Colander
- Large bowl filled with ice and cold water. You want as much ice as possible.
Peel the apples and then remove the seeds and stems with a melon baller. Cut in half and then cut each half into sixths.
Pour the peas and edamame into the colander. Run cool water over them to get rid of any ice crystals (which will allow the boiling water to come back to a boil faster).
Pour the peas, edamame, and apple into the colander. Run cold water over them and pour them into the ice bath. Allow to chill for 3 minutes. Pour back into the colander and pick out any remaining ice.
Pour mix in the blender and add the apple juice. Puree until smooth.
Pour into two ice cube trays.
Wrap and freeze.

I think the instructions are missing a step – like boiling the fruits and veggies. How long should they cook (and do they all go in at the same time? I would think the apples would cook for longer).
I agree…there’s definitely a step missing. I sounds like maybe the peas and edamame will just be blanched (hence the “shocking”) but I’m sure those apples will need to be cooked much longer. I hope this gets updated, I’d really love to make this for my little guy!

3. Pour the peas into the boiling water. Cook for 3 minutes on highest heat.
4. Pour peas into colander. Run cold water over them and pour them into the ice bath. Allow the peas to chill for 3 minutes. Pour the peas back into the colander and pick out any remaining ice.
5. Pour peas in the blender and add 8 ounces of cold water. Puree until smooth.
6. Pour into two ice cube trays.
7. Wrap and freeze.
That’s what the Baby Love combo said about peas elsewhere, I would think add the edamame to the step missing from above & you’ll have what you need.
