Grilled Cheese: Smoked Mozzarella, Roasted Tomatoes and Arugula
Remember that grilled cheese I made last week? Well, I ran out of the ingredients, but still have that grilled cheese with a modern twist craving going on. What’s a girl to do? Grilled Cheese: Smoked Mozzarella, with roasted tomatoes and arugula
4 individual ciabatta rolls
Half of a ball of smoked mozzarella thinly sliced
1 tub of roasted tomatoes
1 large handful of arugula
cooking spray
Spray the outside of the ciabatta. Place a layer of smoke mozzarella followed by a layer of roasted tomatoes, then arugula and finish with a few sliced of the mozzarella. Heat griddle over medium, place the sandwiches on the griddle once heated and cook for 3-5 minutes. Flip and cook for an additional 3 minutes or until bread is golden brian and cheese is melted. Serves 4 lucky people.
