Who: Pam Nelson, mother to two kids living in Portland
Why we love this blog: We like Pam because we get Pam. She too struggles to feed her kids in the healthiest, most economic, and time-saving way possible, so Pam’s recipes are clearly designed for and by moms. Thankfully, this site skips preachy posts about how your kid is missing out if they can’t eat ox tail by age two or how salt mined from the Dead Sea is better than the grocery store variety. Instead, Pam focuses on making the foods you already know taste better in your kitchen instead of a restaurant. Simple and tasty beef stroganoff, anyone?
