Who: Elana Amsterdam, a mother of two based in Boulder, Colorado
Why we love this blog: After being diagnosed with Celiac disease, this former environmental consultant launched a blog dedicated to showcasing how to make gluten-free meals even those without specialty diets can enjoy. When Elana was diagnosed with multiple sclerosis in 2006, the blog got injected with even more passion and drive to provide tasty treats for readers with dietary restrictions. After all, who in their right mind would turn down these coconut macaroons? Despite the fact that she caters to a gluten-free readership, Elana’s blog and two cookbooks showcase recipes that appeal to anyone with a food-forward attitude.
