Who: Karen Petersen, a mother of two based in Utah
Why we love this blog: Karen may describe herself as an “anti-chef,” but you wouldn’t know it from her recipes. This blog launched in 2009 as an experiment to see if Karen could make a new slow-cooker recipe everyday for a year. Since then, the blog has drawn a horde of loyal readers, led to media appearances, and even spawned a cookbook, all for one simple reason: Karen’s not after perfection; her blog exists to show busy moms how to get a nutritious meal on the table without going nuts in the process. Plus, she’s got more than a few tricks up her sleeve. In addition to traditional slow cooker dishes, 365 Days also includes recipes for surprising crock-pot eats, like slow-cooked hummus and chocolate-covered coconut peanut butter bites.
