I'm packing my daughter's school lunch, saving the environment isn't my
top priority, though I am mindful of what I'm packing foods in, and the overall nutritional content of the meal.
So, it's good to know that just by making her favorite sandwich - PB&J, hold the J -
an armchair activist like myself can actually do some real good for the world. Slapping some peanut butter on a piece of whole grain bread (or a whole grain cracker or rice cakel) means I'm actually
reducing
my carbon footprint, by saving the equivalent of 2.5 pounds of carbon
dioxide emissions that the average animal-based lunch like a
hamburger, grilled cheese, or chicken
nuggets necessitates. (
That's
about40% of what I'd save if I drove a cool hybrid, instead of a Japanese station wagon.)
