Truffles sound like they'd be really complicated to make, but the truth is, they couldn't be simpler. In fact, there are only three ingredients: chocolate, heavy cream, and butter. Melt them together, roll them into balls, dip them in more melted chocolate and toss in some cocoa powder (okay, four ingredients), and you're good to go.
These truffles are perfect for Valentine's Day because, well, they're truffles. But more importantly, they're homemade. It won't cost you much more than $5 to make several dozen, which would run you $100 or more at a fancy chocolate store.
Last year, my friend Greg Case, a pastry chef, and I wrote an article about ganache (which is the base of a truffle) for Fine Cooking; you can get the recipe with step-by-step instructions so you too can impress your honey here. Be sure to check out the tasty variations, like Toffe and Fleur de Sel. They need more than three ingredients. But they're worth it.
