Kitchenista: Muffin Tin Monday

Lunches for the pre-school set can get pretty monotonous, especially if you're the one who is making them day in and day out. How many different ways are there to make cheese chunks and grapes interesting? 

If Bento boxes are beyond what you're willing to tackle, the muffin tin is the best way out. And if you're a joiner, one mom is declaring every Monday as "Muffin Tin Monday" and would like you to do the same. There's even a flickr group.

It's genius, I tell you. Not only is it a handy way to keep everyone interested in lunch, it also lets you blow your kids' minds when you use the tin to make actual muffins.

I tried this approach out last night and the boys loved it! I did however have to re-stock the hot dog slices and goldfish several times to satisfy the masses.

I think it might be fun to not fill a couple of the cups so that the kids can re-arrange stuff to their own liking. You could also fill a couple with dipping sauces like ketchup or mustard or ranch dressing.

You can also buy smaller muffin tins that only have 6 cups.

Or use egg cartons, smaller and you can double up.
