Kitchenista: Stuff It

Posted by Adrienne Martini

My go-to meal is the good ol' PB&J. Problem is that we rarely have bread in the house anymore since the oldest kid can't eat it. What is a lazy mom to do?

Simple. Hack an apple in half. If you're feeling artsy, take a melon baller (Heh. Baller.) and scoop out the core and seeds. If not, just cut them out. Smear the halves with peanut butter. Add jelly, if you have it. Bingo. Snack.

Some over-achievers go one step further and stuff their fruits. Looks yummy, doesn't it?

While I'm going to stick with my easy way out, it dawns on me that the PB apple  could be a vehicle for just about anything. Raisins, if you're into that. A mini Hershey's Special Dark sounds even better. Add a nice sparkling white and it's dinner.
