Kitchenista: Kids Like Yellow Soup, Trust Me

squash soupWhen the weather turns colder, my kids start asking for squash soup. Of all the soups I make and there are a lot of them (because hello, soup - easy!) it's their favorite, hands down. Of all three, and when all three like the same thing it's either a minor miracle or it's something so awesomely yummy that I just have to share it with you. Because I like you so much.

So here goes, the easiest butternut squash soup in the universe:

Butternut Squash Soup

1 largish butternut squash
1 quart chicken stock
1 onion


Peel and seed squash and cut into chunks. Chop onion. Place squash chunks and onion in a saucepan along with the stock (vegetable stock is fine).  Bring to a boil and then simmer until squash is tender.

Puree cooked squash, along with the stock, in a blender and add back to the pot. Season to taste and add milk (non-dairy is fine) to thin if necessary or to create a slightly more creamy texture.  It seems to work fine either way, and the whole recipe is hugely forgiving. I'll bet you could season it with various flavors, but we tend to like the savory.

Simple, quick, and yummy. Oh, and nutritious too. Who knew kids would eat squash?

I like to roast the squash first... gives it a smoky, kind of nutty flavor..... mmmm, squash soup is a hit here too!
